Fickle Pickles Salmon Croquettes
Try our delicious new Fickle Pickles Salmon Croquettes recipe! Pairs well with our Fickle Pickles Tater Salad. Also delicious as a base for Eggs Benedict.
INGREDIENTS:
Use 1 pound of fresh cooked salmon, separated and flaked or a 14-15 ounce can of precooked salmon.
- Salmon, 1 lb precooked or 14oz can
- 1/2 C. Panko Breadcrumbs
- 1/4 C. Scallion or Shallot, thinly sliced
- 1/4 C. Fresh Parsley, chopped
- 2 Tbsp. Fickle Pickles, chopped
- 1 Large Egg
- 1/2 Tsp. Salt
- 1 Tsp. Cracked Black Pepper
- 1 Tsp. Dried Dill
- 2 Tbsp.Fickle Pickles Juice
- 2 Dashes Worcestershire Sauce
- 1/4 C. Veg Oil (traditional fry)
DIRECTIONS:
- In a large bowl, flake precooked, cooled salmon or remove from can and separate.
- Add all dry seasoning and stir well.
- In a small bowl, mix egg, Fickle Pickles juice and Worcestershire sauce.
- Pour liquid over salmon and mix well.
- Fold in parsley, scallion, Fickle Pickles and breadcrumbs.
- Shape into 6 patties.
- For traditional skillet frying, place half of vegetable oil in skillet over medium heat for 2-3 minutes.
- After heating, place as many patties as will fit without touching each other.
- Fry for 4-5 minutes on each side until golden brown.
- Add oil as needed.
- For air fryer, spray cooking basket with non stick spray and preheat to 400 degrees.
- Place patties without touching in basket and cook for 15 minutes, turning over halfway.
