Fickle Pickles (Slow Cooked) Italian Beef Sandwich

Fickle Pickles Beef Sandwich is a hearty meal that’s easy to make! Try our new recipe this week to keep dinner simple and delicious. This recipe is for a large batch that makes 8-10 servings – perfect for a big family dinner!

INGREDIENTS:

  • 3 or 4 Lb. Chuck Roast
  • 2 Tbsp. Olive Oil
  • 2 C. Beef Broth
  • 1 C. Fickle Pickles Juice
  • 1 Packet Dry Italian Dressing Mix
  • 2 Tsp. Coarse Grind Black Pepper
  • French Rolls for Sub sandwiches
  • Sliced Provolone Cheese
  • Fickle Pickles
  • Red Onion, thin sliced
  • Spicy Brown Mustard or Mayonnaise

DIRECTIONS:

  1. In a large skillet, heat olive oil over medium high.
  2. Add roast and brown on all sides, about 2 min per side.
  3. Remove roast and place in crock pot.
  4. Add a little beef broth to deglaze skillet.
  5. Add broth and browned bits to crock pot.
  6. Next, sprinkle pepper and dry Italian dressing mix over roast.
  7. Add beef broth and Fickle Pickles juice.
  8. Set crock pot to cook on either LOW for 8 hours or high for 4 1/2 hours.
  9. Remove roast after fully cooked, place on heat safe surface and shred meat (use caution while hot).

TO MAKE SANDWICH:

  1. Pre heat oven to Full Broil.
  2. Slice rolls just enough to open bread up without fully separating and add 2-3 slices of provolone cheese.
  3. Place on cooking sheet and toast under broiler for 2-3 minutes.
  4. Add spicy mustard or mayo if desired after removing bread from oven.
  5. Top with a generous amount of shredded roast, Fickle Pickles and red onion.
