Fickle Pickles Egg Salad Recipe
The Fickle Pickles Egg Salad recipe is protein packed and delicious! Easy to make and a great sandwich idea for lunch at work or for a weekend picnic! Takes about 20 minutes to prepare plus 1 hour to chill.
INGREDIENTS:
- 8 Eggs, hard boiled & cooled
- 1 Green Onion, finely sliced
- 1 Rib Celery, finely diced
- 3 Tbsp. Fickle Pickles, diced
- 1/2 C. Mayonnaise
- 1/2 Tbsp. Dry Mustard
- 1/2 Tsp. Celery Salt
- 2 Tbsp. Fresh Dill, finely diced (or 1/2 Tsp. dried)
- 1 Tbsp. Fickle Pickle juice
DIRECTIONS:
- Peel and rinse hard boiled & cooled eggs.
- Cut in half and scoop out yolks into a large bowl.
- Dice cooked egg whites or use an egg slicer (slice one direction then turn and slice the opposite direction).
- Mash yolks with mayonnaise, dry mustard, celery salt and Fickle Pickle juice until the mixture is smooth and creamy.
- Add egg whites, green onion, celery and Fickle Pickles to yolk mixture and stir well.
- Add salt and pepper to taste.
- Chill for a minimum of 1 hour.
Makes up to 8 servings. Serve as a sandwich on grainy bread with crisp lettuce or as an appetizer with crackers. For a spicy egg salad use our Extra Spicy Fickle Pickles and add a dash of cayenne pepper. Follow us on Facebook for recipes and more!
