Fickle Pickles Bloody Mary Meatloaf
We’ve had many requests for this recipe, so here you go! The Fickle Pickles meatloaf also makes a tasty sandwich for lunch the next day (if there’s any leftover).
INGREDIENTS:
- 2 Lbs Lean Ground Beef/Pork or combination
- 1/2 C. Sweet Onion, finely diced
- 1/2 C. Fickle Pickles, chopped
- 1/4 C. Celery, finely diced(optional)
- 2 Tbsp. Fresh Chopped Parsley, divided
- 1 Tsp. Black Pepper
- 1/2 Tsp. Salt
- 3/4 C. + 3 Tbsp. Bloody Mary Mix*
- 1 Large Egg, Beaten
- 1 C. Plain Breadcrumbs
DIRECTIONS:
- Pre-heat oven to 350 degrees.
- In a large bowl, mix ground meat, onion, Fickle Pickles, celery, parsley, pepper and salt.
- Next, add beaten egg, Bloody Mary mix and breadcrumbs.
- Combine with hands until all ingredients are mixed well.
- Coat a loaf pan with non-stick spray.
- Place meatloaf mixture in pan and top off with 3 Tbsp. Bloody Mary Mix*.
- Bake for 55 minutes or until internal temperature reaches 160 degrees.
- Let stand for 5 minutes before slicing.
- Sprinkle with remaining chopped parsley.
- Serve with your favorite side dishes such as Fickle Pickles Tater Salad!
*We recommend Austin’s own Revolution Bloody Mary Mix in Roasted Garlic or Classic flavor.
