Fickle Pickles Bloody Mary Meatloaf

We’ve had many requests for this recipe, so here you go! The Fickle Pickles meatloaf also makes a tasty sandwich for lunch the next day (if there’s any leftover).

INGREDIENTS:

  • 2 Lbs Lean Ground Beef/Pork or combination
  • 1/2 C. Sweet Onion, finely diced
  • 1/2 C. Fickle Pickles, chopped
  • 1/4 C. Celery, finely diced(optional)
  • 2 Tbsp. Fresh Chopped Parsley, divided
  • 1 Tsp. Black Pepper
  • 1/2 Tsp. Salt
  • 3/4 C. + 3 Tbsp. Bloody Mary Mix*
  • 1 Large Egg, Beaten
  • 1 C. Plain Breadcrumbs

DIRECTIONS:

  1. Pre-heat oven to 350 degrees.
  2. In a large bowl, mix ground meat, onion, Fickle Pickles, celery, parsley, pepper and salt.
  3. Next, add beaten egg, Bloody Mary mix and breadcrumbs.
  4. Combine with hands until all ingredients are mixed well.
  5. Coat a loaf pan with non-stick spray.
  6. Place meatloaf mixture in pan and top off with 3 Tbsp. Bloody Mary Mix*.
  7. Bake for 55 minutes or until internal temperature reaches 160 degrees.
  8. Let stand for 5 minutes before slicing.
  9. Sprinkle with remaining chopped parsley.
  10. Serve with your favorite side dishes such as Fickle Pickles Tater Salad!

*We recommend Austin’s own Revolution Bloody Mary Mix in Roasted Garlic or Classic flavor.
